We had a lovely meal at the Peruvian restaurant, Para Dos, in Coral Gables. It was delicious, but the highlight was the Papas a la Huancaína. When I tell you this sauce is to die for, I’m not kidding. You’ll want to eat this by the bowlful, keeping it all for yourself.
Over the years, I’ve gotten considerably more fond of lentils. They are so much more than just soup. I love lentil salads. And that’s almost what this is (and can be!). It makes a great backdrop for a piece of grilled salmon, cod or Branzino. And that’s what we’re doing with it today. 
My mother used to make this soup. I have vivid memories of coming home from school, walking into the kitchen and the heavenly scent of this soup, wafting through the room…really, through the whole house! It’s such an autumn or winter soup. It just tastes nourishing. 
It’s that time of year…the beginning of soup season. Or autumn to normal people. And as it happens, it’s also apple season. See the connection I made there? Nothing gets by The Goddess. This seemed like a marriage made in heaven. And it is!

The zucchini are still bearing, the peppers are starting to bear and the corn…oh God, the corn! It’s so delicious fresh, but it’s nice to have a few jars of corn relish tucked away for later.
