Okay. Right off I want you to know that The Goddess is misleading you. Yup. She’s leading you down the culinary garden path. She broiled the corn; she has no grill. And creamy? There is no cream, either. But, I’m here to tell you. This is truly delicious!

I’ve never been too big a fan of Manhattan-Style Clam Chowder. I prefer creamy soups to tomatoy-brothy soups, but I gotta’ tell you…I like this one. I like this one a lot. It’s loaded with vegetables, chunky and while there’s broth, it has a heap of flavor. And you know, The Goddess is all about flavor.
The Brazilians add corn to things. We don’t usually add corn to our hot dogs, but they do…Yup, hot dogs. As well as, those yummy little potato sticks. So, this is different, but it is a wonderful version of chicken salad. It’s creamy, has a nice pure flavor, a little crunch at the end. It’s just flat-out delicious.
In my recipe box, this is called “Southern Confetti Salad”. And it does look like confetti, doesn’t it? But, that doesn’t really tell us much about this salad. It is a great option for a summer picnic salad, as it’s both easy and can sit out for a bit. But, it’s just as good in the dead of winter, with two feet of snow on the ground. Did I mention that it’s also delicious?
I had falafel for lunch last week and I was reminded how much I love that flavor profile. I also noticed how nice and crispy the exterior was, so The Goddess, having a mind like a steel trap, thought, ‘hmmm…I wonder how a falafel mix would work for coating fish?”
This is a summery chowder, when the corn is fresh and delicious and the shrimp are running. The bacon and scallions are just the icing on the cake…so to speak.
Seven Layer Dip has been around for years, and with good reason. It’s delicious. It’s easy and it’s delicious. It goes together in a flash and it’s delicious…are you seeing a pattern here? But, seven layers is just a tad too limiting for The Goddess….
