Dry Rubbed, Slow-Roasted Not-Adam's-RibsIt’s time to fess up.  I do love ribs.  The Goddess likes to gnaw on bones…it’s a thing.  And she prefers her ribs to be slow-roasted in the oven, not on the grill.  You knew she was unorthodox, but the ribs don’t dry out in the oven.  You can control the moisture and well, they’re just better.  And dry rub is the secret to great ribs. Spiced, Braised Pork Shoulder with Roasted PineappleThe Spicy Honey took me to Doce Provisions for my birthday.  It’s a nice little place, with an interesting and delicious menu.  Their “Lechon Asado Buns”, which they serve on bao, were heaven.  They were the inspiration for this, except I put the meat and pineapple on an arepa.  Continue reading →

Papa Rellena Stuffed PeppersI love stuffed peppers.  I didn’t always, but the I grew up.  And now I do.  I love the sweetness of the pepper, after it roasts.  I seem to always like whatever is stuffed into them.  It always seems to work.  And these Papa Rellena Stuffed Peppers…baby, do they ever work!  Continue reading →

Cuban Ham Dip-UpdatedThe original Cuban Ham Dip is delicious.  It is.  But, it’s evolved.  The Latin Lover likes the evolution.  He thinks it’s even better than the original.  It still has a smoky, sweet-sharp flavor, and it’s still creamy and robust.  But, it’s more complex.  It makes a great sandwich.  Or maybe a Super Bowl slider?  Continue reading →

Pork Butt with Parmesan-Garlic-Rosemary StuffingGarlic-parmesan crusted pork is a thing of beauty!  Yes indeed, it is.  The combination is near Nirvana, or at the very least ethereal.  And I wanted to use the Instant Pot™, so I could use the pressure cooker feature…it worked like a charm!  Continue reading →
