Vegetarian Stuffed Patty Pan SquashThis is a perfect and perfectly delicious vegetarian entrée.  Of course, you can stuff zucchini, but if you can get your hands on some patty pan squash, grab ’em up.  They’re just so much more fun.  These reheat well, so they can be prepared when you have time and then you can simply reheat for a nice mid-week meal.  Continue reading →

Bacon-Fried Rice with Clementine BitsWhaaaaat?  Clementines, in fried rice?  There are all sorts of recipes in Asian cooking that use orange/Mandarin/tangerine.  Orange chicken?  Tangerine Beef (or chicken)?  So why not fried rice?  Oh, you noticed the bacon, too, did you?  Continue reading →

Chicken Burgers with Scallions, Ginger and Thai FlavorsThe Goddess has never been all that enamored with chicken burgers per se.  Having said that, these beauties are different.  Chicken burgers tend toward the dry, but not these babies.  They are jam-packed with flavor, and the Thai chili sauce and cucumbers add that sweet and extra crunch that is just ooooh! so lovely.  Continue reading →

Prairie Chili with BeansThe weather outside is frightful!  Chili is just this thing to take a bite out of the cold.  I know we’ve explored Chili with all the Good Stuff! in the past.  Though similar, this version is much closer to the chili my mother made, out there on the Prairie.  I make us sound like the Wilder’s from “Little House on the Prairie”, don’t I?  However, I don’t recall that they made chili!  Continue reading →

Not-Quite-Classic Creamy ColeslawAs I mentioned in the post for the Broccoli-Apple Slaw with Cranberries, I’ve discovered broccoli slaw, that mixture of shredded broccoli that lives in the produce department of your supermarket.  We really liked that slaw, but it’s not exactly a “classic” slaw.  So why not make a more classic version of coleslaw, but using the broccoli instead?  Seriously.  Why not?  We’re flexible, aren’t we and this is just as delicious.  Maybe even better.  Continue reading →
